Cochinita pibil is a dish made with pulled pork. This meat is marinated with achiote, lemon juice, habanero pepper, salt, and pepper. Pibil means “underground oven” its name comes from the way it is cooked since the pork is prepared by burying it wrapped in banana leaves.
